Indigenous bush food ingredients give Christmas puddings an authentically Aussie twist

The quandong — a fruit that has been a traditional staple for thousands of years for Aboriginal people — is giving the traditional Christmas pudding an authentically Australian twist this year, while also helping create jobs in the local community. His company Dreamtime Tuka, based in Wellington, in the New South Wales central west, works to create food products using traditional Aboriginal ingredients, to provide local jobs in food production. "So not only is it creating job opportunities, it's also helping to create a vision for Aboriginal people, a way to tell their story." Mr Smith is working in partnership with South Australian chef and food promoter Andrew Fielke, who said he is enormously excited to be bringing Australian flavours to a wider audience.
