This eggplant burger is inspired by the classic dish, melanzane alla parmigiana, or eggplant parmigiana. A layered dish of fried eggplant, tomato sauce, buffalo mozzarella and basil leaves baked in the oven until bubbling and melted. Buying smaller ones means they need no extra preparation before cooking like salting and draining, which I tend not to bother with anyway., I also tend to buy ones that are small to medium in size.
