Axone, a modern Naga restaurant, opens in Hyderabad

Axone is the first restaurant in Hyderabad that serves exclusively Naga food, modern Naga cuisine to be precise. Expect to eat a lot of red sticky rice, axone, bamboo shoots and pork. “Axone is difficult to appreciate if you have not eaten it before.” So he says, they have a softer approach, where they introduce the ingredients in familiar formats, “like sushi with red sticky rice, bamboo shoot soup, bamboo shoot fry etc.” I try the sushi, made with the traditional red sticky rice from the Northeast, which has a pleasant nutty texture. The thal also include a red chutney made of garlic, naga mricha, peanut paste and a portion of axone pork curry.
