Celebrity chef, author and television presenter Rick Stein has posted videos to his Instagram page demonstrating how to make fresh and tasty beef tacos at home. The famed chef behind 'Rick Stein at Bannisters' restaurants in New South Wales, said the Mexican dish serves eight people and is made using 900 gram blade steak cuts, spring onions, corn tortillas, guacamole and a tomato-based salsa sauce. Heat your barbecue or a griddle pan over a high heat until it's smoking hot Grill the onions for 2 to 3 minutes, then keep them warm, grill the beef slices for about 30 seconds per side Warm the tortillas in a dry frying pan, in a microwave or in the oven Fill with the beef and spring onions, both sliced, the guacamole and the salsa roja Source: Rick Stein Instagram How to make guacamole at home Ingredients: 1 large, avocado, flesh removed from the skin 1 jalapeño chilli, chopped Juice of 1/2 lime 2 spring onions, sliced 1 small handful of coriander leaves, roughly chopped 1/2 teaspoon salt Method: Peel avocado skin and scoop texture into mortar and pestle Roughly smash everything in a mortar and pestle or pulse in a food processor Source: Rick Stein Instagram How to make salsa roja at home Ingredients: 4 large tomatoes and 2 cloves garlic, skin on 1 whole red jalapeno or chilli 1/2 tsp salt 1 small onion, chopped Juice of 1/2 lime Small handful of coriander Method: Roast or pan-fry tomatoes, garlic and chilli until softened Peel garlic and put in mortar and pestle with chilli Bash them together then add tomatoes and salt and continue bashing until you have a thick pulpy sauce Source: Rick Stein Instagram For dessert, Rick has also previously revealed how to make a simple maple syrup tart – which only consists of four ingredients. Puff pastry – Woolworths $2.30 Maple Syrup – Woolworths $2.50 Lemon – one fresh lemon 84c each or $1.00 lemon juice from Woolworths Bread crumbs – Coles $4.10 Source: Coles and Woolworths website For this specific recipe, Rick said to blind bake the pastry in the oven for 20 to 25 minutes at 200 degrees Celsius, then remove the beans and baking paper and bake for an additional eight to 10 minutes.
